He energetically runs this elegant seafront restaurant. The contemporary setting in shades of mauve adds to the charm, the service is impeccable, the menus reasonable, and Sylvain Hervochon's cuisine is a fusion food without confusion. He convinced Gerard Lanvin, a well know french actor, to buy a house at La Baule, received the filming crew of « 15 août » and other celebrities such as Noah, Bruel and Claudia Cardinale. Stephan Malhaire has transformed the very chic restaurant Nossy Be, of which he is the owner and manager since 1995, into a celebrity temple. Through sheer hard work. For this former town councillor admits his liking for « the stress of a busy service, including its tensions and charges of adrenalin ». For unique tastes

For the last 15 years, this seafront restaurant, hugely popular with celebrities, is a compulsory visit, and it has the advantage of having an authentic chef, Sylvain Hervochon.

Unique savours and products create a surprising culinary experience: red tuna tataki with sesame seeds accompanied by a daikon radish and tobiko( flying fish roe ) salad, John Dory "a la plancha" with sundried tomatoes and cumbava( small bitter lemons ), calamari risotto.

For dessert, salted caramel butter macaroons are very popular as is the light "Strawberry Nossy". We like : the trendy atmosphere of this La Baule establishment which has even edited its own compilations ! Elle

Up and coming tables

A cosy atmosphere and « sea, sex and fun » for a healthy seafood cuisine with an occasional japanese touch. On the menu, langoustines with lemon mayonnaise, red tuna tataki with sesame seeds or even sushi maki with coconut milk and fresh fruits. Menu : 26 euros. Carte : 40 euros. L'express

Stephane malhaire in his element

He is part of a new generation without which La Baule would be much less exciting. The Nossy Be, his restaurant "on the beach", as Stephane Malhaire likes to point out, has become "the place to be".

Son and grandson of restaurant owners, Stephane Malhaire had nevertheless promised himself never to enter this business "because I knew just how demanding this life is" he explains. But the bug and the passion for this job finally caught up with him.

After business studies in the States, a few years as press attaché in Paris, he decides to go back to the sea and open spaces, and take over the reins of Nossy Be, the family restaurant.

Modest about his achievements, Stephane Malhaire assures us that the reputation of his establishment is largely due to his uncle, the delightful Jean-Claude Brialy. "He was kind enough to recommend my restaurant to all his friends".

The young owner of Nossy Be forgets to say that if his customers are so loyal, it's also because he's known how to create a unique atmosphere. "I like to have a good time, I wanted to recreate the same atmosphere as one finds at Nikki Beach in Saint-Tropez, without the excess of popping champagne" he adds.

In his restaurant, the food is mouthwatering. It's all down to Sylvain Hervochon, an extremely talented chef. Madame Figaro
